A favorite pomegranate recipe pairs the taste (and nutrition) of the fruit with toasted walnuts in a wonderful winter salad. It’s colorful and beautiful on your plate, not to mention great tasting and great for you!

To prepare the vinaigrette, place the shallot, vinegar, mustard and thyme in a small bowl. Slowly whisk in the olive oil, then season to taste with salt and pepper.

Place salad greens, apples and blue cheese in a large bowl and toss with the vinaigrette. Add half the pomegranate seeds and walnuts, then toss again. Sprinkle the remaining seeds and walnuts over the salad.
