Preheat oven to 375° F. Cut top third of garlic (the pointy end) off crosswise. Place each whole garlic cut-side up on a piece of foil about the size of an 8-inch square. Drizzle 1 tablespoon of olive oil over cut surface and sprinkle with salt. Draw up foil and wrap garlic to seal. They will resemble chocolate kisses when wrapped. Place in small baking dish and bake for 50 minutes. When cool, unwrap and squeeze roasted garlic pulp into a small bowl. Mash with a fork to a paste.
In another small bowl, add diced tomatoes, olive oil, salt and pepper. Brush baguettes lightly with extra olive oil and grill baguette slices over medium-high heat for 3 minutes, or until golden-brown and marked. Brush baguettes with olive oil mixture, and spread with mashed roasted garlic. Top with tomatoes and sliced basil. Serve immediately.
